[What is Izushi soba? ]

In 1706 in the middle of the Edo period, the Matsudaira clan, the lord of the Izushi clan, and the Sengoku clan, the Ueda clan of Shinshu (Nagano Prefecture), were ordered by the shogunate to change their countries. At that time, it is said that Izushi soba was created by a soba craftsman who came from Shinshu with Mr. Sengoku and made use of his soba-making skills.
Izushiyaki started and the style of serving soba on a small plate was established, and now it is known as one of the best soba restaurants in the Kansai region with about 50 soba restaurants.
